Asian style chicken marinade in oranges or apricots

(Quantities refers to an average sized whole chicken)


 Orange or apricot Jam – 3 tablespoons
Olive oil – 5 Tablespoons
Mustard – 1 tablespoon (preferably Heinz)
Soy sauce – 2 tablespoons
Chopped garlic – 4 cloves
Ground black pepper – 1 tablespoons
Salt – 1 teaspoon
Ground coriander seeds – 1 tablespoon
Turmeric – 11 teaspoon


Thoroughly Mix all ingredients in a bowl while stirring the chicken in the marinade, Stuff leftovers into the chicken.

  Leave another serving of the marinade for roasting

Refrigerate overnight.


We recommend taking out the marinated chicken from the refrigerator at least an hour and a half before roasting (Two hours in the winter).

Roasting time – approx an hour and a half to two hours

While roasting pour and spread leftover marinade with a brush every fifteen minutes.
